anybody have a good recipe for sweet potatoes that calls for canned? i don't want any maple syrup (blech) but things like apples or raisins would be acceptable. mostly, though, i want a few sweet potatoes on the side. just a very simple, yummy side dish. using like... two cans of sweet potatoes. since that's what i already have in my pantry. ;)

Sweet Potato Crunch
3 c. mashed sweet potato
1/2 c. sugar
1 stick margarine
2 eggs, beaten
1 tsp. vanilla
1/3 c. milk
1 tsp. cinnamon
1 tsp. nutmeg

Peel, slice, boil and mash the potatoes OR heat canned sweet potatoes. Pour off liquid and mix all ingredients. Cook over medium heat until bubbly. Place mixture in a 3-quart casserole dish.

TOPPING:
1/3 c. margarine
1 c. plain flour
1 c. light brown sugar
1 c. chopped nuts

Melt margarine in a medium skillet. Add remaining ingredients and stir until coated with oil. Put this on top of potato mixture and bake 30 minutes at 350 degrees.

too sweet? yeah... possibly. that's kind of a lot of sugar. and i broke my best casserole dish the other day! i made olivia lupin's baked apples in it, put it in the dishwasher, and dropped a plate on it. sigh.

Well, it's not a recipe, as such (I'm a drib and drab sort of cook), but...

Keep in mind that this all depends on personal taste:
Butter (somewhere between a tablespoon and a stick)
Salt (a pinch)
Vanilla (1 tablespoon)
Brown sugar (between a tablespoon and half a cup)
Cinnamon (or pumpkin pie spice or apple pie spice, keeping in mind both have sugar) (2 teaspoons or to taste)
Cooked sweet potatoes (or canned), mashed

optional extras: coconut, pecans, or raisins; Optional topping: crushed ginger snaps

Stir everything together, put in a casserole dish, sprinkle on topping if using, and bake until hot and fragrant. This is a very easygoing dish--I just stick it in the oven with whatever else is in there and take it out if it starts to brown. If I had to say, though--350 degrees for half an hour, covering with foil if it starts to brown.

Well, I can't say I've made soup without putting a slightly menacing inflection to the word. (Dried frog toes are my secret ingredient, you see.) ;P

I hope it turned out well and you didn't get mobbed at the store. I had to go out hunting whipped cream this evening: it was interesting. But, hey, anything to escape cleaning, right?

and in the end, this is basically the recipe i used. if you want to call it a recipe. perhaps more... some guidelines. ;)

Simple one...

Drain, rinse and pour the canned sweet potatoes into a backing dish with lid. Sprinkle with brown sugar and then pour a little brandy over it. Back until warmed through.

Eat.

I'm going to assume you don't like the taste of maple syrup, but will accept some sweetness? (I'm a sucker for marshmallows baked on top, but that's left over from camping days.)

First, drain your potatoes. Slice an equal amount of apple, such as Granny Smith, and layer with the sliced potatoes, ending with potatoes. Melt all the butter you feel justified serving (!) stir in a tsp of cinnamon (which will also improve your blood sugar balance, which is particularly desirable with sweet dishes. and a tb or so of brown sugar or better yet, since it's a harvest festival, honey. ) Top with a healthy layer of chopped or whole walnuts (I find chopped better to eat with a fork)Pour the butter/honey mixture over everything. Salt at table, because I think canned potatoes are already salted and some people have to limit their salt intake anyway. This also a great entree for vegetarians.

I personally serve the Silver Palate Sweet Potato/Carrot puree, which could be done with drained canned sweet potatoes, an equal amount of thoroughly steamed carrots, and some butter and dill and maybe a little cream, thoroughly mashed or pureed. (Food processor helps on this one.) It's not as sweet as above, but some people are suspicious of purees. A tb or so of sour cream adds a bit of something...

i couldn't find decent granny smiths at the supermarket on thanksgiving morning! i was so peeved.

you're right about the maple syrup. it's the taste of that particular food that bothers me, not the sweetness. sweet is good. especially if it is chocolate. ;)

the only problem with writing something at the top of my game is feeling bad that new readers may well be disappointed by my older work. i hope you like it.

thanks for friending me. i checked your profile and friended you back when i saw you're "old enough" ;). as it happens, many years ago i had a lover who grew up in the detroit area, but you're several years younger than she is. and i doubt she lives there anymore. still, it made me think of her. she had a motorcycle. ahhhh.... good memories.
